INGREDIENTS
3 chicken breasts, with the skin and bone removed
1 Large Green ( Bell) Pepper
1 Medium Onion
1 tablespoon olive oil
1 teaspoon lemon juice
1/2 teaspoon dried basil
4 or more flour tortillas
Additional condiments such as salsa, sour cream, cheese, etc.
METHOD Place the chicken breasts into a baking dish, Cook in a 375 degree (f)oven for 40 minutes, or until the internal temperature at the thickest spot is at least 160 degrees (f). When done, chicken will NOT be pink in the center. Remove, and slice into thin strips. Peel and slice onion in half, and then into strips. Cut open the pepper,remove the seeds and stem, and cut into strips 1/4 inch wide. Heat the oil in a open fry pan, and saute the onions until almost clear, Place the green pepper strips on top of the cooking onions, sprinkle the basil and then the lemon juice on top and allow the mixture ( do not stir) to cook over low heat until the green pepper strips are limp. Place a tortilla on top of the pepper/onion mixture until warm and limp. Place on a plate and add 1/4 of the vegetable mixture and 1/4 of the chicken strips ( or if making smaller portions, a equal amount for each) fold up 1/3 of the tortilla from the bottom, and then fold over the sides to make an open ended envelope. The Fajitas can be held in your hand and eaten like a sandwich, or placed on a plate and a variety of condiments such as sour cream, salsa, cheese can be poured on top.
